There’s something about strawberries that are just SO delicious so many different ways! Over the past couple months, this salad has been my favorite go-to meal for lunch. Not only is it DELICIOUS, but it’s super easy to make!
I don’t follow any specific recipe; I just add the ingredients to my liking and enjoy!
What You Will Need:
50/50 Spring Mix/Baby Greens
Fresh, Cut Strawberries
Crumbled Goat Cheese
Raspberry Hazelnut Vinaigrette Dressing
How to Make:
First, fill your bowl with your 50/50 salad mix. I prefer this to regular lettuce but you could use either. Next, wash and cut your strawberries and add them on top. I like a lot of strawberries, but you can choose how many you prefer. Then, crumble goat cheese over the top and spread it evenly over your strawberries. Drizzle your dressing over the salad and top with chopped almonds. Voila!
I love how the fusion of flavors mixed together creates the perfect combination of sweet and savory. Tip: Sometimes I also add chopped apples and it’s sooooo yummy! I typically eat this salad for an entire week and then take a break, alternating bi-weekly. Being so late into my pregnancy, I’ve found that I get really tired after I eat a meal. This salad is the only thing I can eat that helps me feel more energized. I plan to eat a lot of them once baby sister arrives!
